SMASHED BRUSSELS SPROUTS with homemade chipotle mayo

It’s like smashed potatoes, but make it brussels sprouts! Healthy, nutritious and delicious. Paired with a chipotle dipping sauce! This makes a great appetizer or snack.


Ingredients for brussels sprouts

  • brussels sprouts

  • your favourite seasonings

  • salt + pepper

  • avocado oil

INGREDIENTS FOR CHIPOTLE MAYO

  • 1/2 cup cashews (soaked overnight)

  • 2 chipotle peppers in adobo sauce + 1 tsp adobo sauce

  • 1/4 cup water

  • 1/4 cup lemon juice

  • 2 cloves garlic

  • 1/2 tsp black pepper

  • 1/4 cup extra virgin olive oil


INSTRUCTIONS

  • preheat oven to 420 F. and line a baking sheet (you can also use an air fryer for these)

  • steam brussels sprouts until they are soft and then use the bottom of a glass jar to smoosh them down a bit.

  • drizzle avocado oil on top with salt+ pepper and desired seasonings and bake for 20 minutes or until crispy.

  • while the brussels sprouts are roasting, make chipotle dip by adding everything to a food processor and blending until smooth.
