SMASHED BRUSSELS SPROUTS with homemade chipotle mayo
It’s like smashed potatoes, but make it brussels sprouts! Healthy, nutritious and delicious. Paired with a chipotle dipping sauce! This makes a great appetizer or snack.

INGREDIENTS FOR CHIPOTLE MAYO
1/2 cup cashews (soaked overnight)
2 chipotle peppers in adobo sauce + 1 tsp adobo sauce
1/4 cup water
1/4 cup lemon juice
2 cloves garlic
1/2 tsp black pepper
1/4 cup extra virgin olive oil
INSTRUCTIONS
preheat oven to 420 F. and line a baking sheet (you can also use an air fryer for these)
steam brussels sprouts until they are soft and then use the bottom of a glass jar to smoosh them down a bit.
drizzle avocado oil on top with salt+ pepper and desired seasonings and bake for 20 minutes or until crispy.
while the brussels sprouts are roasting, make chipotle dip by adding everything to a food processor and blending until smooth.
