crispy sweet chilli tofu bowl

If you’re vegan/plant-based, or you simply just want to take a break from meat and try something different, then this crispy sweet chilli tofu bowl is for you! Simple good-for-you ingredients.


Ingredients

  • arugula

  • 1/2 avocado

  • red cabbage, chopped

  • cucumber

  • lemon + garlic + EVOO dressing

  • green onion, chopped

  • 1/2 cup almond milk

  • 1/2 cup cornstarch

  • 1 cup panko breadcrumbs

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • salt + pepper

  • 1 block extra firm tofu

  • avocado oil

  • sweet chilli sauce


INSTRUCTIONS

  • in between 2 napkins, press down gently on tofu to let excess water out. Cut into squares.

  • put almond milk in one bowl, panko + spices in another and cornstarch in another

  • dip tofu first in cornstarch, then almond milk, then panko. Repeat until they are all done.

  • heat in a big pan on the stove with avocado oil and then add the tofu. May have to do this in batches. Cook until crispy on all sides.

  • once done, put into a bowl and drizzle with sweet chilli sauce to coat.

  • add crispy tofu on top of arugula with other add-ins. Drizzle with the olive oil + lemon + garlic dressing.
