easter egg chocolate chip cookies
Who doesn’t love easter eggs?! Especially when they are in cookies. They are delicious, colourful and add a nice little crunch to this soft cookie. Perfect for easter or any time of year!
Ingredients
1 cup brown sugar
3 cups all purpose flour
2 tsp vanilla extract
3/4 tsp baking soda
1/2 tsp baking powder
2 chocolate bars (I used 78% Lindt chocolate, roughly chopped)
cadbury mini eggs
2 large eggs
1 cup melted unsalted butter (you could also try avocado oil instead as it’s neutral and you won’t taste it or coconut oil)
INSTRUCTIONS
mix wet ingredients in a large bowel and then dry ingredients (don’t over mix!)
fold in roughly chopped chocolate and mini eggs. Put in fridge overnight.
the next day, take out of fridge and preheat oven to 310 F. scoop out dough (can either use all of it or keep some of it in the freezer for another time). Bake for 15-20 minutes.
