WHITE BEAN & COTTAGE CHEESE DIP

This is the perfect high protein snack! It’s balanced and delicious. It takes little effort to put together and is healthy at the same time. Snacks like this are perfect especially for in-between busy schedules and days to hold you over until dinner if you are feeling hungry.


INGREDIENTS

  • 1 can white beans (I used cannellini), drained and rinsed

  • 2-3 garlic cloves

  • 2-3 tablespoons cottage cheese

  • 1 tablespoon extra virgin olive oil

  • salt + pepper to taste

  • Squeeze of lemon

  • 1 teaspoon paprika (optional)

  • 1/2 teaspoon cumin (optional)


INSTRUCTIONS

  1. Place everything in a food processor and process until smooth. Taste and adjust flavour/seasoning. Serve with fresh vegetables like cucumbers, peppers, broccoli and carrots and your favourite crackers. I used Mary’s organic crackers.
