Chocolate peanut butter protein muffins
I don’t know about you, but chocolate and peanut butter is one of my favourite combos! This is the perfect snack in between lunch and dinner or as a pre-workout snack. Since I’ve started getting back into personal training, it’s been important for me to focus on increasing my protein intake, so sneaking some extra protein into my snacks and desserts has also been important.
INGREDIENTS
3 eggs
2 bananas
2 scoops chocolate peanut butter protein powder
1 tsp vanilla extract
1 tsp cinnamon
1/4 cup monk fruit
100% dark chocolate chips (for topping)
3/4 cup almond flour
1 tsp baking soda
3/4 cup almond butter
INSTRUCTIONS
1. Preheat oven to 350 degrees F. Line a muffin tin, add batter and top with chocolate chips. Bake for about 15 minutes and let cool when done baking before eating.
