loaded sweet potato nachos with vegan queso
A healthy twist on regular nachos! If you haven’t tried replacing your tortilla chips with sweet potato, I highly recommend it!
Ingredients
red cabbage, chopped (for topping)
green onions, chopped (for topping)
1 large sweet potato
salt + pepper
avocado oil (for roasting)
avocado (for topping)
jalapenos (for topping)
black beans (drained and rinsed - for topping)
VEGAN QUESO
1 cup raw cashews (soaked in warm water for 1 hour and then drained)
1/4 cup nutritional yeast
1/2 tsp salt
1 tsp chilli powder
1/2 tsp smoked paprika
1/2 tsp turmeric
1 tbsp lemon juice
2 garlic cloves
3/4 cup water
1/2 tsp black pepper
INSTRUCTIONS
preheat oven to 425 F. wash and chop sweet potato into circles and mix with avocado oil and salt + pepper and bake in the oven for roughly 20 minutes.
add all vegan queso ingredients to a blender and blend until creamy. Adjust flavouring if needed.
add toppings and drizzle the queso on top and some black beans for protein.
