loaded sweet potato nachos with vegan queso

A healthy twist on regular nachos! If you haven’t tried replacing your tortilla chips with sweet potato, I highly recommend it!


Ingredients

  • red cabbage, chopped (for topping)

  • green onions, chopped (for topping)

  • 1 large sweet potato

  • salt + pepper

  • avocado oil (for roasting)

  • avocado (for topping)

  • jalapenos (for topping)

  • black beans (drained and rinsed - for topping)

VEGAN QUESO

  • 1 cup raw cashews (soaked in warm water for 1 hour and then drained)

  • 1/4 cup nutritional yeast

  • 1/2 tsp salt

  • 1 tsp chilli powder

  • 1/2 tsp smoked paprika

  • 1/2 tsp turmeric

  • 1 tbsp lemon juice

  • 2 garlic cloves

  • 3/4 cup water

  • 1/2 tsp black pepper


INSTRUCTIONS

  • preheat oven to 425 F. wash and chop sweet potato into circles and mix with avocado oil and salt + pepper and bake in the oven for roughly 20 minutes.

  • add all vegan queso ingredients to a blender and blend until creamy. Adjust flavouring if needed.

  • add toppings and drizzle the queso on top and some black beans for protein.
